Weet Bix doesn’t have to be a breakfast thing… in fact who hasn’t had a bowl of this iconic Aussie cereal for dinner..? But seriously, try this slice and you won’t feel so guilty about extending breakfast into the day.
I was first introduced to Weet Bix slice many years ago when I worked in the bank. One of the ladies used to bring it in to share for morning tea, I was hesitant at first; wouldn’t it be dry and disgusting? One bite… and I was sold, we all were! I had to ask for the recipe, and I fell even more in love when I learned that you don’t even need to bake it, what a winner!
I’ve since made these over and over, tweaking the recipe here and there. You can try baking it, and it’s pretty delicious, but I like to get my kitchen chores done in a hurry so I prefer the ‘no-bake’ version.
Recently I experimented with some Acai Powder, and I just had to share this with you all; it’s good! Actually I think the Acai version of this recipe is my favourite, and I feel really good knowing I’ve sneaked vitamins and nutrients into ‘snack food’ (plus, hubby and son have no idea it’s in there because you can hardly taste it)!
Acai powder is packed with nutrients and antioxidants, it promotes healthy brain function, aids in improving cholesterol levels, and there are studies determining the anti-cancer effect Acai can have on the body; however it is still in the testing phases (but it couldn’t hurt to try it, right?).

To make this tasty treat…
You will need:
10 crushed Weet Bix
1/4 cup coco powder
1 Cup desiccated coconut
397g Tin Condensed Milk
1 heaped tbsp Acai Powder
1 cup sifted icing sugar
3tbsp coco powder
1tbsp melted butter
Sprinkles or coconut to garnish
- Place all of the slice ‘dry ingredients’ into a bowl and mix together. Now add the can of condensed milk. Mix well, you may need to use your hands to ensure it mixes evenly.
- Press the mixture into a square baking dish lined with baking paper, pat the mixture down and make sure it is compact (so that it doesn’t break apart when you cut it later).
- Now make the icing. Place the ingredients into a bowl and mix together. Spread the icing over the slice and sprinkle with garnish.
- Set in the fridge to cool for a few hours. Once its firm cut to desired sizes and enjoy!
