Decisions, decisions… today’s go to snack… Cacao Crackles. This is the recipe I go to when I have to come up with something easy, healthy, and substantial for lunches for the week ahead.
These are so easy, I made them in about 10 minutes; and they’re a great way to get the kids in the kitchen. They aren’t sickly and sweet like typical chocolate crackles, and surprisingly my son and hubby go nuts for them.
Ingredients:
1/2 Cup Cacao Powder
1/2 Cup Coconut Oil
4 Tbsp Rice Malt Syrup
1 Tsp Vanilla Extract (pure)
2 1/2 Cup of Brown Rice Cereal
Pinch of Salt
Directions:
Stir coconut oil, cacao powder, rice malt, vanilla and salt in a medium saucepan over low heat until it’s all melted and combined. Remove from heat and stir in cereal. Scoop them into patty cases and allow them to set in the fridge for 15 minutes.
Makes about 12.
